• Cleaning – Before using it for the first time, rinse the Kai Shun Kohen knives with hot water. After use, clean the knives immediately with water, possibly also with a mild washing-up liquid, whereby the blades should be rinsed with clear water. Then dry the Kai Shun Kohen knives carefully with a soft cloth, always from the back of the knife to the cutting edge for your own protection.
• The Kai Shun Kohen knives should never be put in the dishwasher, always wash by hand, this protects the material and maintains the longevity of the sharpness.
